Could someone explain how to open up the 13 pin plug fitted to a Hobby 495, please?

Unscrew the cable entry nut and slide the rubber seal down the cable an inch.
Then unscrew the body that the cable entry nut threaded onto and the entire pinned portion will slide out.

Easier to do than explain!

Thanks for the information.
I was able to unscrew the cable support and slide it down, together with the rubber grommet seal. However, it was impossible to unscrew the body as suggested - assuming that it is a left hand thread - even using grips.

Any further help available, please?

It is only the rear portion of the body that unscrews.
If you grip the front portion that has the flat on it and turn the rear portion anti-clockwise it should unscrew.

There is an Italian made one where you have to force the cable entry rubber back down the cable and prise the front portion out. On these you can see the joint where the screwdriver must be inserted.
They are made by Menber's and are a total swine to dissemble.
I wasn't aware that Hobby had used these and yours appears to be the same as mine as it has a screw on cable clamp and rubber seal which the Italian job doesn't.
